Homemade Peppermint Patties

This are the most amazing, delicious, nutrient dense dessert you will make in the month of December. Created with only 3 ingredients, these peppermint patties are full of antioxidants from the raw honey and dark chocolate. In fact, they are a dessert you can most definitely feel good about putting in your body!

With so many sweets throughout the holiday season, sometimes I want to have a festive treat that I feel good about eating, that’s light, and just a tad sweet. These Peppermint Patties were born out of a desire to enjoy something fun throughout the holidays, while not getting weighted down. Eat these for an after dinner treat, use as an easy gift to give to neighbors, or try displaying them at your next holiday party! The possibilities are endless.

What makes these so good for you? They contain raw, unfiltered honey and dark chocolate. Two ingredients that studies have shown to be high in antioxidants. These two ingredients combined makes a delicious combination that hardly tastes like honey at all… it tastes like an amazing peppermint chocolate treat! How to Make Homemade Peppermint Patties

First, you want to start with melting your chocolate until it is nice and creamy. You’ll line a mini muffin pan with mini cup liners and spoon a small handful of chocolate into each liner. You’ll then take the back of your spoon and push the chocolate until it is half way up the liner on all sides. You’ll do this to all the liners and until all the cups are even and then you’ll place the pan in the freezer.

Next, you’ll make the filling by combining 2 tablespoons of raw honey with with 1/4 teaspoon of peppermint extract. You’ll stir this until completely combined. Once the chocolate has frozen completely, you’ll take your peppermint mixture and dollup small teaspoons into the little chocolate cups.

Next, bang the pan down to make the peppermint mixture disperse and flatten, and then pour the remaining chocolate on top of the peppermint mixture. Top with crushed candy canes and place back in the freezer to harden. Store in the freezer until ready to eat!

Homemade Peppermint Patties

Time: 1 hour including freeze time | Serves: 12 patties

Ingredients:

  • 1 (3 oz.) bar of 70% dark chocolate (I love the Theo Brand)

  • 2 tablespoons raw honey (it must be thick, like this one… regular honey won’t work)

  • 1/4 teaspoon peppermint extract

  • Garnish: crushed candy canes

Directions:

  1. First, line a mini muffin pan with 12 mini liners.

  2. Next, break apart your chocolate bar and place in a microwavable bowl. Microwave the chocolate in 30 second increments or until the chocolate is melted and smooth.

  3. Once the chocolate is melted, add 1 teaspoon to the bottom of each cup. Use a spoon to gently push/spread the chocolate about 1/4 to 1/2 of the way up the sides of the liner. You will have chocolate leftover for later. Place the mini muffin pan in the freezer and let the chocolate freeze while you make the peppermint filling.

  4. For the peppermint filling, mix the raw honey and peppermint extract together in a small bowl until combined.

  5. Once the chocolate has solidified in the freezer, take out and dollop 1/4 teaspoon of the peppermint filling in each chocolate cup. It will look like a tiny amount. Smack the mini muffin pan on the counter a few times to get ride of any air bubbles and to flatten the peppermint mixture.

  6. Drizzle the remaining chocolate over the peppermint filling and move to the sides until the peppermint mixture is no longer visible. Sprinkle each with crushed candy canes and freeze again until solidified.

  7. Enjoy as a healthy holiday treat and store in the freezer for up to 1 month!
