Pumpkin Spiced Whoopie Pies with Orange Mascarpone Filling

Are you a Thanksgiving pie lover? I sure am. But sometimes a throughout the fall season, you crave something sweet, spiced, and flavorful, without being a pie. I know I do… which is why I created these Pumpkin Spiced Whoopie Pies! These little sandwiches are amazingly flavorful, tart, and the perfect dose of sweetness. They’re also the most perfect dessert for kids this Thanksgiving!

The outside sandwich is flavored with pumpkin and the best spices of fall. The filling is made with creamy and delicate mascarpone cheese with orange zest, sugar, and vanilla extract. What more could you want?

The mixture of these spiced pumpkin flavors with the orange mascarpone is truly out of this world. I’m telling you, if you need a potluck dessert, fun friends-giving dessert, kids dessert, or just a fun treat to have around the house, this is what you NEED to make! Trust me, you, and everyone around you will love these!

How it’s Made

These scrumptious little pies are made in a few easy steps. First, we start with the “cookie.” Mixing the dry ingredients and the wet ingredients into a beautifully sweet mixture, we then dollop the batter into little circle shapes on a lined baking sheet. The batter will feel more like a cake batter but the finished product will turn into little circles that resemble cookies. To test that they are finished I could touch them barely at the top to make sure they are firm to the touch but still moist.

Once the little cookies are done baking, we will let them cool and work on the mascarpone filling. Add the butter and mascarpone cheese to a stand mixer and mix until combined. We will then add the rest of the ingredients and mix until everything is incorporated. You can pipe or spread the amazingly sweet and tart filling onto the whoopie pies, making an amazing little scrumptious sandwich!

And let me tell you, these little sandwiches will make you want to come back year after year!

Pumpkin Spiced Whoopie Pies

with Orange Mascarpone Filling

Time: 40 minutes | Serves: 15 Whoopie Pies

Ingredients:

Pumpkin Whoopie Pies:

  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1 tablespoon ground cinnamon

  • 1/2 teaspoon ground ginger

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon ground cloves

  • 1/2 teaspoon salt

  • 1/2 cup granulated sugar

  • 1/2 cup light brown sugar, firmly packed

  • 1/2 cup vegetable oil

  • 1 (15 oz.) can pumpkin puree (about 1 1/2 cups)

  • 1 large egg

  • 1 teaspoon vanilla extract

Orange Mascarpone Filling:

  • 4 oz. of mascarpone cheese (half of a 8 oz. container)

  • 1/4 cup (1/2 stick) salted butter, softened to room temperature

  • 1 1/2 cups confectioners sugar

  • Zest of 1 small orange

  • 1/2 teaspoon vanilla extract

Directions:

For the Pumpkin Whoopie Pie batter:

  1. Preheat oven to 350° F and line two baking sheets with parchment paper or a Silicone baking mat. Set aside.

  2. In a medium sized bowl, combine the dry ingredients: flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt. Set aside.

  3. In a mixing bowl fitted with a paddle attachment, combine the sugar, brown sugar and oil. Add the pumpkin puree, eggs, and vanilla and mix until combined. With the mixer on low speed, slowly add the flour mixture to the pumpkin mixture until combined.

  4. Using a medium sized cookie dough scooper, drop the cookie batter into circles on the baking sheets about an inch apart.

  5. Bake for 10-12 minutes or until the tops are slightly firm to the touch and a toothpick comes out clean. The pies will be moist. Remove from oven and let cool completely before spreading on the filling.

For Orange Mascarpone Filling:

  1. In a mixing bowl fitted with a paddle attachment, beat the mascarpone cheese and softened butter on medium-high speed until combined (around 1 minute). Turn the mixer to low speed and slowly add the confectioners sugar until combined. Add the orange zest and vanilla extract and mix to combine.

  2. To assemble, turn one cookie upside down and pipe or spread the filling onto the flat side. Top with another cookie and repeat until all the cookies are use. ENJOY!

    Note: Store your whoopie pies in the refrigerator unless you are serving them a few hours after making them.
