Dark Chocolate Peanut Butter Cups

Are you the type of person that always says “I feel like a little something sweet” every night after dinner? If so, you’re in good company!

Most nights, after dinner, I cannot help but grab a little chocolate, a bite of ice cream, or even a cookie. Usually, I’ll grab a Trader Joes Dark Chocolate PB Cup and think to myself “this may be the best thing ever created.” The one thing I don’t like about them, though, is the additives included and the high cost for a couple of cups.

I started to brainstorm what it would look like to make these adorable treats. I wanted them to be both healthy and delicious, without the price point and without extra added ingredients. Not too long after, recipe after recipe, I finally created my favorite version of Dark Chocolate Peanut Butter Cups! And I’m so excited to share them with you!

These little cups are packed with flavor. First, they are made in 20 minutes or less. Second, they only contain 4 ingredients. Third, they are the perfect combination of sweet, savory, salty, and even bitter. The 70% dark chocolate bar is melted down to be a silky smooth consistency. Then, you gently pour in about a teaspoon of chocolate into each mini cup liner. You gently take a small spoon and push the chocolate to each side of the cup (as shown in the photo series below!) Then, you put the mini muffin pan in the freezer so the chocolate you poured can solidify. In the meantime, you make the peanut butter filling by mixing 1/4 cup peanut butter with 1 teaspoon honey, and 2 teaspoons of coconut flour. You mix this together until combined.

Once the chocolate has solidified, you take it out of the freezer and add the peanut butter to the little chocolate cups you’ve created. I do about 1 teaspoon of the peanut butter mixture in each cup or until the cups are filled and meet the chocolate. Next, you will pound the muffin tin on the counter to make sure there are no air bubbles in the peanut butter and everything is laying neatly together. Then you pour the remaining chocolate on each cup to cover.

Your work is completed once you add some flaky salt, place back in the freezer, and enjoy!

  1. Dark Chocolate

  2. Peanut Butter

  3. Raw Honey

  4. Coconut Flour

Dark Chocolate Peanut Butter Cups

Time: 20 minutes | Serves: 8-10 cups

Ingredients:

  • 1 (3 oz.) 70% dark chocolate bar

  • 1/4 cup natural peanut butter (I use JIF Natural)

  • 1 teaspoon raw & unfiltered honey

  • 2 teaspoons coconut flour

  • Flaky Salt for sprinkling

Directions:

  1. First, line a mini muffin pan with 10 mini liners.

  2. Next, break apart your chocolate bar and place in a microwavable bowl. Microwave the chocolate in 30 second increments or until the chocolate is melted and smooth.

  3. Once the chocolate is melted, add 1 teaspoon to the bottom of each cup. Use a spoon to gently push/spread the chocolate about halfway to 3/4 of the way up the sides of the liner (as seen in the first photo below). You will have chocolate leftover for later. Place the mini muffin pan in the freezer and let the chocolate freeze while you make the peanut butter filling.

  4. For the peanut butter filling, mix peanut butter, honey, and coconut flour together in a small bowl. Once the chocolate has solidified in the freezer, take out and fill 1 teaspoon of the peanut butter filling in each chocolate cup (or fill until the line of the chocolate you created.) Smack the mini muffin pan on the counter a few times to get ride of any air bubbles and to create a flat surface for the peanut butter filling.

  5. Drizzle the remaining chocolate over the peanut butter filling and move to the sides until the peanut butter is no longer visible. Sprinkle each with flaky salt and freeze again until solidified.

  6. Enjoy as a healthy treat and store in the freezer for up to 1 month!
