Jill’s Granola Bites

Have you ever wanted to make something that actually competes with your favorite granola bar? For me, I love running, biking, hiking, being active with my husband, and just enjoying the outdoors. But something needs to fuel my adventures… amiright? Additionally, sometimes I want a “little something” after dinner to satisfy my sweet tooth, but still be nourishing and healthy. Usually nothing suffices but cereal, neither filling nor nourishing. With such a dilemma, I decided I wanted to create something that could both nourish my body and be a delicious fun treat, without having the ingredients that make for a usual “treat.” These granola bites satisfy both cravings— the craving of eating something delicious, and the craving of nourishing my body with fueling things. If you’re anything like me, you will LOVE these Granola Bites!

Made with both a soft texture and a crunch, these little bites will become your new BFF! Actually, after I made these for the first time and gave one to my husband, he said “Jill, you need to call these ‘Delicious Yummies’… they are SO good!” After contemplating if I should actually call them that just for the fun of it, I decided to name them “Jill’s Granola Bites” instead (original right? ;)). These are truly everything that I want in a granola bar, but packed into a cute little bite. Instead of only having a soft texture, these have some crunch from the rice crisps, which I love. They are great if you want more than one bite, or if all you need is that “little something.” Made with nourishing almonds, coconut, oats, honey, and some chocolate chips, these really are PACKED with so many amazing Omega-3 fatty acids.

Usually the word “fat” scares people into thinking something’s bad for them. But these energy bites actually couldn't be more fueling for your body and higher in good fat. Jill’s Granola Bites

Time: 20 minutes | Serves: 12-18 bites

Ingredients:

  • 1/2 cup old fashioned oats

  • 1/2 cup raw almonds, unsalted

  • 1/4 cup unsweetened coconut flakes

  • 1/2 cup creamy almond butter (I get mine from Costco)

  • 2 tablespoons raw and unfiltered honey

  • 2 tablespoons melted coconut oil, unrefined

  • 3/4 cup puffed rice cereal

  • 1/4 cup mini dark chocolate chips

Directions:

  1. In the bowl of a food processor, pulse oats and raw almonds until it reaches a fine mixture (not super chunky, but not too blended either).

  2. Next, add in the coconut flakes, almond butter, honey, and melted coconut oil. Pulse until the mixture is uniform and finely crumbled.

  3. Next add in the puffed rice cereal and dark chocolate chips. Pulse until combined. (Note: If your mixture is far too crumbly, simply add more honey or coconut oil and combine however, following this recipe, the mixture should be just perfect!)

  4. Remove the lid and blade of the food processor. Using your hands, squeeze the dough together and roll between your palms to form bite-sized balls. Refrigerate or freeze the bites for a quick treat, snack, or pre-hiking energy! Enjoy!
