Strawberry Overnight Oats

If you’re anything like me, a big bowl of oatmeal on a cold winter’s morning hits the tummy perfectly! But in the summer, oatmeal can just make me start sweating (who’s with me?!). Whipping up a smoothie is one of my go-to’s — but after a while that can get pretty old. Cooler breakfast items in the summer are something I crave! Some options include yogurt, granola, hard boiled eggs, avocado toast, orrrr… OVERNIGHT OATS!

In my opinion, this is summers version of oatmeal — cold, fruity, flavorful, nutty, thick, and protein packed! It’s the perfect way to make breakfast for a hurried work morning or even just a quick chilled snack! It’s also the easiest breakfast recipe EVER! All you do is combine all the ingredients, put in the refrigerator overnight, and wallah!… you have a wonderfully healthy, nourishing breakfast that satisfies completely!

What I love about overnight oats is that they can be completely customized to your preferences. Cinnamon isn’t your favorite? You can always exclude it and try another spice like nutmeg. Don’t have honey in your pantry? Use a banana! If you add substitutes to each ingredient, the final product is still likely to still turn out great. It’s so flexible!

For this recipe, I use frozen strawberries and oat milk. This combination creates the perfect sweet and tart flavor that is addictive! The frozen strawberries add a tarter flavor and actually contain more vitamins and antioxidants than fresh strawberries (because they are frozen at their peak ripeness and flash frozen to keep in nutrients). A cup of oats have about 19% of your needed daily value of iron. But did you know that your body can’t absorb iron without Vitamin C? That’s why this recipe is the perfect combination! The strawberries act as the Vitamin C component to help your body absorb the oat’s iron content. It’s a win, win!

For the best texture, I like to stick with 8+ hours of rest time, but in a hurry 4 hours would still work.

Overnight Oats are basically fool-proof, kid-friendly, and perfect for a busy work morning. What’s not to love?!

Add-In More!

  • Granola

  • Sliced Bananas

  • Blueberries

  • Peanut Butter

  • Almond Butter

  • Greek Yogurt

  • Coconut Flakes

  • Mini Chocolate Chips

  • Pecans

  • Cinnamon

Without further adue, here is my beloved Strawberry Overnight Oats Recipe! I hope you enjoy it and that it fuels your summer adventures!

Strawberry Overnight Oats

Time: 5 minutes | Serves: 2

Ingredients:

  • 1 cup frozen strawberries, chopped

  • 1 cup oats

  • 1 cup milk of choice (I use Oat!)

  • 1/2 teaspoon pure vanilla extract

  • 1 tablespoon pure honey

  • Additional toppings for serving, if desired (pecans, granola, sliced bananas, coconut flakes, blueberries, almond butter, cinnamon, etc!)

Directions:

  1. Combine all ingredients into a glass airtight container and stir to combine. Place in fridge overnight or for at least 4-8 hours.

  2. Serve for breakfast or an afternoon treat! Top with almond butter, fresh berries, or, my favorite, Purely Elizabeth Granola)! Enjoy!
