Easy 5 Ingredient Pumpkin Oatmeal

Warm and sunny summer mornings have come and gone, making room for chilly and refreshing October mornings. Honestly, October has never been my favorite month. Why? I feel it is an ode saying goodbye to summer bbq’s, summer sunsets, and the warm weather that pierces your skin. I love the feeling of warmth, sunshine, and long days. To me, October seems to usher in the cold months and a start to the winter gloom I feel year after year.

However, this year, I have welcomed fall with a little more enthusiasm. I’ve decided to feel refreshed by the chilly weather, enthused by the changing leaves, and grateful for seasons. Sometimes you need change to look back and have perspective. Seasons come and go, both in nature, and in life.

What season of life are you going through? Maybe it’s a season of joy, feeling more and more excited with each coming day. Maybe it’s a season of uncertainty, feeling anxious and nervous about what may be ahead. Or maybe it’s a season of gloom, feeling sad and down throughout the hours that fill your life.

Whatever it may be, know this: with each coming season, God’s grace abounds. You may find yourself on the highest mountaintop or maybe the lowest valley this October. But throughout it all, God is still in control and he is still moving. Just as natural seasons fill our year, so do seasons of life. The greatest thing we can do is look to Him throughout it all and find joy in the little things that fill it. For me, joy is found through cozy food that warms the heart. This Pumpkin oatmeal does just that.

How it’s Made

This weekday breakfast was made with time in mind. It is simple, fast, and perfect to take out the door with you. I top mine with walnuts and pumpkin granola for extra crunch and fatty acids.

Simply make a pot of regular oatmeal and add in the ingredients. Serve and enjoy— what could be easier?

5 Ingredient Pumpkin Oatmeal

Time: 10 minutes | Serves: 2 servings

Ingredients:

  • 1 cup old-fashioned oats

  • 2 cups water

  • 1/2 cup pumpkin puree

  • 1/8-1/4 cup maple syrup (I use 1/4 cup but you can use less if you like it less sweet)

  • 1 1/2 teaspoons pumpkin pie spice

  • 1/2 teaspoon vanilla extract

  • For topping: Pumpkin Granola, walnuts, pecans (highly recommend toppings!)

Directions:

  1. In a small saucepan, add your oats and water and set the heat to medium. Once it starts to simmer, turn the heat down and simmer for about 5-10 minutes or until it reaches your desired thickness.

  2. Once the oatmeal has been cooked, add in your pumpkin, maple syrup, vanilla extract, and pumpkin pie spice. Mix together until smooth.

  3. Top with your favorite granola (I like the Pumpkin Seed + Flax Granola from Natures Path) and walnuts or pecans. Eat immediately while hot and enjoy!

    — Storing Instructions: Simply place plastic wrap over the pot or place in an airtight container and store in the fridge for up to 6 days. Eat for leftovers for other breakfasts.
