One Skillet Sweet Potato Enchiladas

I don’t know about you but I could eat Mexican meals every single night… who’s with me?! It’s so flavorful, nourishing, delicious, and usually very simple to make.
“Usually simple” except for one specific dish… enchiladas. Enchiladas are one of most flavorful and delicious Mexican dishes, yet they take SO much time to assemble. With this one-skillet enchilada recipe, you’ll never have to worry about spending hours assembling enchiladas. Not only do these enchiladas taste delicious, but they’re also VERY healthy for you, too!

Did you know that the amount of meat the average American consumes has been shown to increase the risk of chronic disease? For this reason, my husband and I decided to become flexitarian. This is a term we coined upon ourselves for being half meat eaters and half vegetarian.
This started back in 2020 when we watched the documentary Game Changers. I had always learned in nutrition school that meat had it’s benefits, but that the American diet had put far to much emphasis on it. After watching the documentary, it solidified the knowledge I already had and propelled me to do something about it. I felt empowered to actually try this new style of eating: half vegetarian and half meat eating. After all, what did we have to lose?
Throughout the time we spent trying different vegetarian meals, we came to love it… we loved the affect it had on our health and overall energy. I always encourage my clients to enjoy at least one meatless meal a week… this lowers their risk from chronic disease, helps cholesterol levels, improves digestion, floods them with added vitamins, and helps their overall energy in amazing ways. This meal came out of my desire to eat more vegetarian meals, but quickly became a household favorite.
This recipe is truly SO delicious. My husband asks for it every week and has actually coined it as his “favorite meal.” Coming from him, that is a HUGE deal. Overall, I’m so excited to finally get to share it with you!

How it’s Made

Three words describe this meal: healthy, delicious, and easy! Made all in one skillet, this meal has easy cleanup, simplified steps, and a whole lot of goodness. We start by sautéing our vegetables. Then we add our black beans, enchilada sauce, corn, and tortilla pieces to the skillet. Simply mix it all together.
Next, you’ll add 1/2 cup of cheese, mix, and then layer the rest of the cheese onto the top. You’ll then place everything into the oven to broil until the cheese becomes nice and melted. You’ll serve it immediately while it’s hot and gooey! Top with cilantro, avocado, Greek yogurt, and lime wedges! YUM!

One Skillet Sweet Potato Enchilada Bake

Time: 30 minutes | Serves: 4

Ingredients:

  • 2 teaspoons olive oil

  • 3-4 cups diced sweet potatoes (from about 2 large sweet potatoes)

  • salt and pepper, to season

  • 1 medium yellow onion, diced

  • 5 cloves of garlic, minced

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • 1 (15 ounce) can black beans, rinsed and drained

  • 1 cup frozen corn, thawed

  • 6 regular sized tortillas, cut into strips (you can use flour or corn, whatever you prefer)

  • 1 (12 ounce) bottle red enchilada sauce (I love the Trader Joe’s kind)

  • 1 cup reduced-fat mexican cheese (or whatever cheese you prefer), divided

  • For Serving: cilantro, avocado, Greek yogurt, and lime wedges

Directions:

  1. First, start with heating the olive oil over medium-high heat in large oven-proof skillet. Add the cubed sweet potatoes, onion, garlic, cumin, and chili powder. Season with salt and pepper. Cook, stirring occasionally, until the sweet potatoes and onions are tender (but not mushy), about 10-15 minutes.

  2. Next add the black beans, corn, tortilla pieces, and the can of enchilada sauce. Stir to combine. Reduce heat to medium-low and sprinkle in 1/2 cup of cheese. Stir again. Turn on your oven broiler to high. Sprinkle an additional 1/2 cup of cheese over the top of the enchilada mixture and place it in the oven under the broiler for about 3-5 minutes until cheese melts and creates a nice golden brown color. Remove from heat and serve immediately.

  3. Serve with cilantro, avocado slices, Greek yogurt, and lime wedges! Enjoy!
