Gluten Free Strawberry Oat Waffles

Do you have any breakfast traditions? In my home growing up, my Dad would always wake up early on Saturday mornings to make us a home cooked breakfast! It usually consisted of pancakes, eggs, fruit, and, of course, crispy bacon. I absolutely adored this tradition and quickly realized that Saturday morning breakfast was something I wanted to continue in my own home someday. Now, 10 years later, I continue to make either pancakes or waffles for my husband and I every Saturday morning… it’s a tradition I have come to truly love. This waffle recipe was made in those sweet breakfast tradition memories.

How it’s Made

These waffle are very fast and easy to make… plus, they have minimal cleanup. All made in a food processor, these waffles are perfect for a fast breakfast! I added freeze dried strawberries for fun summer flavors, but I definitely recommend some chopped strawberries on top for extra strawberry goodness.

For the batter, all you’ll do is combine your oat flour, freeze dried strawberries, and remaining dry ingredients in a food processor and pulse until blended. Then you’ll add your wet ingredients to the mix and blend until just combined. Over-blending will bust the bubbles created by the baking powder and make a flatter waffle. Then, you’ll scoop the batter into your waffle maker and wala! You have fresh and amazing summer waffles at your finger tips.

Can I make this recipe without the freeze dried strawberries? Absolutely! If you do, I recommend making the recipe the same way, excluding the strawberries, but adding 1/4 teaspoon of cinnamon in addition to the other dry ingredients.

Gluten Free Strawberry Oat Waffles

Time: 20 minutes | Serves: 4 full sized waffles

Ingredients:

  • 1 1/2 cups gluten free oat flour (or grind up gluten free oats)

  • 1 cup freeze dried strawberries

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 3/4 cup almond milk

  • 2 eggs

  • 5 tablespoons coconut oil

  • 2 tablespoons maple syrup

  • 1 teaspoon vanilla extract

  • 1-2 cups chopped strawberries, for topping

  • Maple Syrup, for topping

Directions:

  1. First, start with combining the dry ingredients into the bowl of a food processor. Pulse until the strawberries are fine and everything is combined.

  2. Next, mix the wet ingredients in a separate bowl. Then pour the wet ingredients into the food processor and pulse until combined. It will be more liquidy and then it will thicken up as the baking powder gets activated.

  3. Next, scoop batter into your waffle maker (I do about 3 scoops per waffle), and cook until completed. Continue with the rest of the batter until you have 4 full sized waffles made.

  4. To serve, drizzle with maple syrup and chopped strawberries! Enjoy!

    Note: you can make this waffle recipe without using the freeze dried strawberries if you don’t have them on hand. I recommend making the recipe the same way, but adding 1/4 teaspoon of cinnamon in addition to the other dry ingredients.
