Strawberry Mango Salsa with Lime Marinated Chicken

How it’s Made

This meal is extremely easy to make! To start, simply combine your chicken marinate ingredients in a medium sized bowl and add your chicken to it. Marinate this for 1 to 8 hours, and even longer if desired. Then, assemble your salsa by chopping your fruits and veggies and adding them all to a small bowl. Fold to combine. You can set the salsa aside and store in the fridge before serving, but I suggest serving it immediately for the best results! Unused salsa can be placed in an airtight container and it good for up to 3 days!

Next, we’re going to grill our chicken by adding it directly to a grill or grill pan on medium high heat. It will cook for about 8-10 minutes per side or until a meat thermometer inserted comes out at 165 degrees. You want amazing grill marks for all the best flavor!

Finally, you’ll simple assemble! Add cooked white jasmine rice to your plate with your chicken breast, and then spoon the salsa all over the rice and chicken. Eat and ENJOY!

Strawberry Mango Salsa with Lime Marinated Chicken

Time: 30 minutes | Serves: 4 servings

Ingredients:

For the Chicken:

  • 2 lbs. grass fed and finished boneless, skinless chicken breasts

  • 1/2 cup extra virgin olive oil (this keeps the chicken super juicy)

  • The juice of 2 large limes

  • 3 teaspoons minced garlic

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

For the Salsa:

  • 1 cup chopped strawberries

  • 1 cup chopped mango

  • 1 medium avocado, chopped

  • 1/4 cup finely diced red onion

  • 1/4 cup finely chopped cilantro

  • The juice of 1 lime

Additional Ingredients:

  • 1-2 cups jasmine rice, rinsed

  • Extra cilantro and lime juice for serving

Directions:

  1. First, start by preparing your chicken marinade. Combine all chicken marinade ingredients in a medium bowl. Mix together and dunk the chicken so everything is coated. Cover and set in the fridge to marinade for 1-8 hours.

  2. When you’re ready to cook, start by making the jasmine rice according to the package instructions. Set aside.

  3. For the salsa: combine all salsa ingredients into a medium bowl and fold to combine. Place in the fridge to chill until ready to serve.

  4. For the grilled chicken: Place a grill pan or grill on medium heat. Scrape off any burned bits from your grill before adding the chicken. Add the chicken (discarding the marinade) and grill for 8-10 minutes per side, or until a meat thermometer inserted into the center reaches 165 degrees. Make sure the chicken has nice grill marks for extra flavor!

  5. To assemble, scoop your jasmine rice onto your plate, then add your chicken breast. Spoon the strawberry mango salsa all over the rice and chicken. Serve with additional cilantro and lime sprinkled on top. Enjoy!
